Milk arrives at the creamery each morning fresh from the farm. Within one hour of delivery the milk is entering the cheese vats to start the cheese making process. Each cheese will have a different combination of cultures, vat temperature and curd stirring, pressing, brining, and aging process specific to the cheese to produce the flavors and quality we strive for.
